Today we share a detailed guide to make a DIY strawberry cake at home. This cake is soft, creamy, and fresh. It combines a light chiffon cake base with smooth cream and sweet strawberries. The structure is simple but the taste is rich.
We explain everything step by step with clear ingredient amounts and exact procedures. Even beginners can follow easily and achieve good results. Let us start with the ingredients first, then move to the baking process and assembly.

Part 1. Ingredients We Need

We divide the ingredients into three parts: cake base, cream filling, and decoration.
1. Chiffon Cake Base Ingredients
- Egg yolks: 3
- Egg whites: 3
- Milk: 30 g
- Corn oil: 25 g
- Low gluten flour: 50 g
- Sugar: 55 g
- Salt: 0.5 g
- Lemon juice: 0.5 g
These ingredients create a soft and airy cake base.
2. Cream Filling Ingredients
- Whipping cream: 300 g
- Sugar: 20 g
This mixture gives smooth texture and sweet balance.
3. Decoration Ingredients
- Fresh strawberries: 200 g to 300 g
- Small amount of edible coloring (optional)
We wash the strawberries first and keep them dry before cutting.

Part 2. Step by Step - Making the Chiffon Cake Base

Step 1. Mix Liquid Ingredients
- We pour 30 g milk and 25 g corn oil into one bowl. Stir until fully blended. The liquid should look smooth without oil floating on top.
Step 2. Add Flour and Egg Yolks
- We sift 50 g low gluten flour into the liquid mixture. Stir gently to avoid lumps. Then we add 3 egg yolks. Mix until the batter becomes smooth and slightly thick. Set it aside.
Step 3. Prepare Egg White Mixture
- In another clean bowl, we add 3 egg whites and 0.5 g lemon juice. We start beating at low speed.
Step 4. Add Sugar Gradually
- We add 55 g sugar in three parts. Add the first portion after foam appears. Add the second and third portions while continuing to beat. Add 0.5 g salt at the same time.
- We beat until soft peaks form. The texture should hold shape but still look smooth. This usually takes several minutes.
Step 5. Combine Batter and Egg Whites
- We take one third of the whipped egg whites and fold it into the yolk batter. Use a spatula and mix gently from bottom to top.
- Then we pour the mixed batter back into the remaining egg whites. Fold carefully until evenly combined. Do not overmix because we want air inside the batter.
Step 6. Pour into Mold
- We pour the batter into a cake mold. Fill it about 70 percent full. Lightly tap the mold on the table to remove air bubbles.
Step 7. Bake the Cake
- We preheat the oven for 30 minutes. Bake at 150C with top and bottom heat for 30 to 40 minutes.
- We check the cake by inserting a toothpick. If it comes out clean, the cake is ready. After baking, we turn it upside down to cool completely.

Part 3. Step by Step - Assembling the Strawberry Cake

Step 1. Cut the Cake
- After the cake cools, we cut it horizontally into two equal layers. Use a sharp slicer to keep the layers flat.
Step 2. Whip the Cream
- We pour 300 g whipping cream into a bowl. Add 20 g sugar.
- We beat the cream until it reaches about 80 percent firmness. It should be smooth and thick but still easy to spread.
Step 3. Prepare Strawberries
- We wash 200 g to 300 g fresh strawberries.
- We cut some into halves for decoration. Cut some into thin slices. We can also cut some into small cubes for filling. Different shapes create better texture and visual effect.
Step 4. Add Cream and Strawberries
- We spread cream evenly on the first cake layer. Then we add chopped strawberries on top of the cream.
- Place the second cake layer on top. Press gently to secure it.
- Then we cover the top and sides with cream. Use a scraper to smooth the surface.
Step 5. Create the Drip Effect
- We whip part of the cream to about 50 percent firmness. Slowly pour it on top of the cake.
- The cream will naturally drip down the sides and create a beautiful effect.
Step 6. Final Decoration
- We decorate the top with strawberry halves and slices. We can arrange them in a circle or place them randomly for a natural look.
- We can also add small cream dots around the strawberries to make the cake more elegant.

Final Result

Now our DIY strawberry cake is finished. It has a soft sponge base, creamy filling, and fresh strawberry flavor. The layers look clear and the surface looks smooth and attractive.
